A banana chip dryer is a piece of equipment specifically designed for uniformly dehydrating fresh banana slices to a state suitable for consumption or preservation. The operational technology primarily involves the following key steps:
Pre-treatment: First, the harvested bananas are peeled and then quickly sliced to reduce oxidative browning. Subsequently, they are washed to remove excess pulp and impurities.
Drying Control: The sliced bananas are evenly spread on the trays of the dryer. Using a hot air circulation system, drying is carried out under suitable temperature (typically controlled between 40-60°C) and humidity conditions. This process requires strict control to avoid nutrient loss or darkening of the color caused by excessively high temperatures.
Regular Turning and Inspection: To ensure uniform drying, the banana slices need to be turned regularly, and their dryness level should be checked periodically to prevent localized overheating or sticking.
Termination and Cooling: The drying process is terminated once the banana slices reach the required moisture content (generally below 10%). They are then subjected to natural cooling or air cooling treatment to maintain their crispness and color.
Packaging and Storage: Finally, the cooled banana slices are sealed in packaging to isolate them from air and moisture, thereby extending their shelf life and preserving their flavor.

Throughout the entire process flow, the precise control of temperature, humidity, and time is key to ensuring the quality of the banana chips.
